How do you know when bleu cheese has gone bad??
WIth other cheese, it is obvious by the mold! But with bleu cheese - how do you know??
I am guessing someone will know this answer.
I am a huge Stilton fan but don't buy it often because I never know how long it'll keep!

I thought I read a while ago that there is an ingredient (long term) in a bag of shredded cheese that is actually saw dust or something similar that keeps that cheese fresh longer. Did anyone else read what I am talking about? What is the ingredient?
anyone have this recipe? My host made it as an 'extra' at her show the other night. Said she got it from an older season's best when she attended a show many moons ago. Except she made it into a ball instead of a roll. I believe it has ham, cream cheese, cheese, pecans or walnuts and I'm not...
So I made the 4-cheese garden pizza for my show last week, and I have another request for it this coming Friday (which I ok'd before I made it for the first show). I ran into some "hurdles" so to speak. Can anyone give me pointers on it?

I don't know if any of you remember, but I had problems with the bamboo cheese board and the petite simple addition squares. The squares would NOT fit! Yesterday I got my sample box, and with it was the petite SA cranberry. Guess what.....they fit BEAUTIFULLY!!

I'm going to try making this on Saturday, but I'm afraid the full recipe will be too much for just DH and me... even leftovers! Has anyone tried halving the recipe and baking it in the medium bar pan? I'd think it would work, but I'm not sure how much to cut the baking time down.
Even with all of our wonderful grating products I still do not like to grate cheddar cheese at shows! But then I do not want to tell my host to buy the already grated when we sale so many graters!
I need to start grating ahead of time, so, I do not have to do is for so long at shows...
