Here is a classic Pampered Chef focaccia bread recipe from the 1990s:
Pampered Chef Focaccia Bread
Ingredients:
- 2 3/4 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 tablespoon active dry yeast
- 1 cup warm water (110°F/45°C)
- 2 tablespoons olive oil, plus more for topping
- Coarse sea salt, for topping
- Fresh rosemary or other herbs, for topping (optional)
Instructions:
1. **Prepare the Dough:**
- In a large mixing bowl, combine 1 cup of the flour, salt, sugar, and yeast.
- Add warm water and 2 tablespoons of olive oil to the dry ingredients. Mix until smooth.
- Gradually add the remaining flour, mixing until the dough forms a ball.
2. **Knead the Dough:**
- Turn the dough onto a floured surface and knead for about 5-8 minutes until it becomes smooth and elastic.
- Place the dough in a lightly oiled bowl, turning it to coat all sides. Cover with a clean cloth and let rise in a warm place for about 30-45 minutes, or until doubled in size.
3. **Shape and Second Rise:**
- Punch down the dough and place it on a greased baking sheet or stone.
- Flatten and stretch the dough into a rectangular shape (about 12x8 inches).
- Cover again and let rise for about 20-30 minutes.
4. **Prepare for Baking:**
- Preheat the oven to 400°F (200°C).
- Using your fingers, make indentations all over the dough.
- Drizzle olive oil over the top and sprinkle with coarse sea salt. Add fresh rosemary or other herbs if desired.
5. **Bake:**
- Bake in the preheated oven for 15-20 minutes, or until the bread is golden brown.
- Remove from the oven and let cool slightly before serving.
