What is the difference in the old ultimate mandoline #1087 and the newer one #1109?
 
Just a quick reply without looking but I am guessing the food holder is the round shape on the new one - much better. It can also be ordered as a replacement part.
 
The most important difference is that the old one could be used without the food holder. (You weren't supposed to do that, but it was possible.) The new one requires the use of the food holder to engage the blade.

That was true of the one BEFORE..we had a minor modification just a few seasons back that changed the shape of the food holder. I had to look up the item number.
