Vegetarian Bride-Need Recipe Ideas

Any recipe suggestions for a vegetarian bride? I want to do a simple demo for her bridal shower, or at least something I can make simple with a little prep work.

I like the mango confetti salsa for bridal showers and it's vegetarian. Quick and easy, shows off the quite a few tools including the MFP, no heat (oven or stove) required so it can be set up where ever it fits into the shower.

Great two person recipe to do side by side with the bride (in her PC brides apron, of course) and quick to clean up and get out of the way

I am doing a veggie pizza at a bridal shower this weekend. I take the crust prebaked to save time. It is quick and easy.

I recently did a show with fajitas, and the one vegetarian guest brought these soy chicken strips with her. I put her chicken with a bit of peppers and onion in my 8" saute pan. Aside from the chicken, all the other ingredients in the fajitas are vegetarian, so this worked well and didn't really require any extra work.
