I just HAD to share this recipe. I got it from my fantastic Exec, Sue Burkhardt (hi, Sue!). I've been meaning to make it for a couple of weeks, called in sick <cough, cough> today, and just made this. I had a piece for breakfast.
Spiced Pumpkin Cake
1 (18.25 oz) yellow cake mix
1 (3 oz) box Pumpkin Spice instant pudding mix
1 cup milk
4 eggs
1/2 cup oilHeat oven to 350F. In large bowl. combine all ingredients. Beat well with an electric mixer for several minutes to combine and aerate. Pour into greased and floured fluted pan. Bake 45-55 minutes, or until cake tester inserted near center comes out clean. Cool in pan on cooling rack 10 minutes, then turn out. Combine powdered sugar with a little cinnamon (or Cinnamon Plus) and sprinkle on top.
The piece I had was plain, and was fabulous. But it would be really good with a little caramel sauce on top, or a scoop of cinnamon or caramel ice cream. And I imagine that other combinations of cake mix and pudding flavors would be just as good (strawberry cake and cheesecake pudding, chocolate cake and chocolate pudding, yellow cake and butterscotch pudding, etc.).Enjoy!1 (18.25 oz) yellow cake mix
