I was assigned a pasta salad for Easter potluck. I was wondering if you all would share a Pasta salad you all make for potlucks and such? I have made the Colosal pasta salad a few times and the Asian one also.... this year I wanted to try a new one. Anyone like to share theirs? TIA it doesn't have to be a PC recipe ;)
 
Heather - I have one that I really like - it's not an Italian dressing one though, it's more of a sweet and sour dressing...I'll post it if you're interested.

This is the Hubby's favorite pasta salad!


Sweet-Sour Pasta Salad

1 Pkg. (16 oz) tricolor spiral pasta
1 med. red onion, chopped
1 med tomato, seeded and chopped (I use 2 Roma)
1 med. cucumber, seeded and chopped
1 med green & red pepper, chopped
2 Tbls. minced fresh parsley
1 teas. PC Dill Mix


DRESSING

1 1/2 C sugar
1/2 Cup vinegar
1 Tbls. ground mustard
1 teas. salt
1 teas. garlic powder


Cook pasta according to pkg. directions, drain and rinse in cold water. Place in large serving bowl. Add vegetables, parsley & dill and set aside.

In a saucepan, combine dressing ingredients. Cook over med. low heat for 10 minutes, or until sugar is dissolved. Pour over salad and toss to coat. Cover and refrigerate for 2 hours. Stir will before serving.

16 servings.
