Anyone know what those meatballs are on the cover? Is the recipe in the new Cooking for Two or more book? I don't have that book. Could someone post the recipe?

I wonder if they are the Pan Asian Meatballs that are in the SB S/S '07

No, the Pan Asian metaballs are rolled in rice. They end up looking a little like a Hostess Snowball. :)
Unfortunately, I don't have my cookbooks with me (at work right now), so can't check for it.

Here you go...Curried Turkey Meatballs
The Pampered Chef®
Cooking for Two and More Page 103

Feel free to experiment with other flavors of chutneys, such as peach or
pineapple, found in the gourmet jelly section of the supermarket.

Prep time: 20 minutes Total time: About 50 minutes


1 pound 93% lean ground turkey
2 slices French bread, coarsely chopped (1/2 cup fresh bread crumbs)
1-13 cup golden raisins
1/4 cup thinly sliced green onions with tops
1 egg, lightly beaten
1-1/2 teaspoons curry powder
2 garlic cloves, pressed
1 teaspoon salt
1 jar (9 oz) hot mango chutney, such as Major Grey
1 tablespoon cornstarch
1 red bell pepper, diced
Additional thinly sliced green onion (optional)


1. Preheat oven to 375°F. In large bowl, combine turkey, bread crumbs, raisins, green onions, egg, curry powder, garlic and salt; mix until well blended. Form turkey mixture into balls using Small Scoop. Heat (12-in.) Skillet over medium heat until hot. Add meatballs and cook about 10 minutes or until meatballs are browned on all sides, turning often. Remove Skillet from heat.

2. Combine chutney and cornstarch in Small Batter Bowl; add chutney mixture and bell pepper to Skillet. Stir to coat meatballs; spoon into Mini-Baker. Bake 15-20 minutes or until glaze is thickened and meatballs are cooked through. Remove from oven; sprinkle with additional thinly sliced green onion, if desired.

Yield: 8 servings

Light. Nutrients per serving (about 4 meatballs): Calories 280, Total Fat 5 g, Saturated Fat 1.5 g, Cholesterol 60 mg, Carbohydrate 43 g, Protein 14 g, Sodium 770 mg, Fiber 1 g
Diabetic exchanges per serving (about 4 meatballs): 1 starch, 2 fruit. 1-1/2 low-fat meat (3 carb)
