Error in 29-Minute Cookbook - Enchilada Casserole

Good afternoon, everyone!

Last night I made the Enchilada Casserole from the 29 Minutes to Dinner cookbook, and noticed that the amount of water seemed a little high. I sent a note off to the test kitchen, and this is what I got in response.

Dear Ann,
Thank you for contacting The Pampered Chef! I appreciate you bringing this to our attention. The metric measurement that is indicated in the recipe is 75ml which even still is incorrect and should be 175ml. 50 ml is only about 3 tablespoons however. The sauce is supposed to be relatively moist. We developed the recipe this way in order to have enough moisture to soak into the tortillas so that when the casserole is cooked in the microwave, it is still very moist when you eat it and not dry from the tortillas. Feel free of course to cut down the amount of water if you prefer. Maybe try 1/2 or 1/4 of a cup. I apologize for the confusion. Please feel free to contact us should you have any more questions.

If you feel that the sauce is very runny, however, you can decrease the amount of water. I let mine simmer for a few minutes to reduce, and it was fine.

I may have to make up a little "correction" card to give to people who purchase this cookbook - since I'm intending to sell the snot out of this book!
 
other than that, Ann, was it as yummy as it sounds?:)

It was really good. It reminded me of a Mexican Lasagna recipe I have - and you could totally add stuff to it. The lasagna recipe has a bean layer, that would be easy to add. And I think some sliced black olives on the top would be tasty. I served it with sour cream, as suggested.
 
I made it according to directions (I always do exact the first time) and it was perfect! I would not use less water (it was not runny at all) in fact my son suggested less tortilla.

[note: I thought it was a bit much water when I was preparing it but thought worse case I would cook it longer to simmer off the excess liquid - but I did not need to make any adjustments!]


...now as far as the metric correction is concerned I will be sure to pass that along but I don't think it will affect many of my customers.

I usually follow the directions to a T the first time I make something as well, but after I poured in the water, it just looked really runny. I knew there was only a few minutes microwave time, so there wouldn't be a big chance to lose a lot of the moisture there. I got a little scared, and then when I looked at the metric measurement indicated, I assumed that the English measure was the one that had a typo.

Now I know, and I'll follow the directions next time. ;)
 
This was the first recipe I tried in the 29 Min Cookbook. I too just simmered the meat mixture a little while. The only other change I made was I doubled the cheese. My family LOVES cheese so I grated an 8 oz. block. YUMMY!!
