Can Mini Muffin Pans Be Used to Make Individual Frittatas?

I am watching Everyday Italian and she is making a frittata and instead of putting it in a large skillet, she is doing individual ones in a mini muffin pan. We have several recipes for frittatas so this would be something that the new consultants could do since they don't get a family skillet in their kit. I don't know if it would take two batches but if so, they could keep half for home for their family and half at the show.

Can you give us an idea of how she made them?

Basically, take any quiche filling and put it into the MMP without crust. Use the small or medium scoop. Bake as directed for mini quiches. They'll puff up a little, but will fall a bit as they cool. Let them set for a couple of minutes before you pop them out of the pan.
