Can anyone think of a reason I couldn't cook the meatballs 1 day ahead and just refrigerate them??? Trying to figure out why they recommend freezing. Any foodies out there who might know?
 
I would think that you definitely could. right now I have chicken meatballs in the frig, since Thursday and they will be finished off tomorrow. Maybe to be on the safe side, they say that IF you make them 3 days ahead, might want to freeze them to make sure they are fresh.
